Ingredients
- 280 g canned artichokes (you can use artichokes in oil or water, depending on your preference).
- 100 g cream cheese
- 2 tablespoons sour cream
- 1 garlic clove, minced (optional, if you like a garlicky touch)
- Juice of 1 lemon (or to taste)
- 1 teaspoon Dijon mustard (optional, adds a nice flavor twist)
- Salt
- Black pepper
- A bit of fresh chopped dill or parsley
Instructions:
- Prep the artichokes: If using canned artichokes, drain them well and pat them dry with a paper towel. Chop them into small pieces.
- Set aside a small portion of the chopped artichokes. Place the rest in a food processor or blender with the cream cheese, sour cream, and garlic (if using). Blend until smooth and creamy.
- Add the lemon juice and Dijon mustard (if using), and mix well.
- Transfer the mixture to a bowl. Add salt and pepper to taste. If the dip is too thick, stir in a bit more sour cream to adjust the texture. Stir in the reserved chopped artichokes for added texture, and mix well.
- Serve in a bowl and garnish with chopped fresh dill or parsley for an extra flavor boost.
